Entanglement in "hot" (300nK) matter

A great irony of ultracold atoms is that although the temperature is low compared to humans, many times it is high relative to the energy scales controlling interesting phases of matter. In such “hot” systems, the equilibrium properties are often mundane and can be described by simple theoretical techniques. In contrast, out of equilibrium – even starting from “hot”, initially uncorrelated conditions – non-trivial, highly entangled states emerge. I can discuss many examples. One timely example is our (unpublished) prediction in an out-of-equilibrium Hubbard model of intertwined ferromagnetic (!) and charge density structures, which recently may have been observed in experiments.
